This salad is super quick and easy to make.  It is the perfect fresh, cool side to accompany any spring or summer meal.  Enjoy!

What you’ll need:

  • 12 oz fresh green beans (preferably organic)
  • ½ cup chopped onion
  • ½ cup chopped tomatoes
  • ¼ cup apple cider vinegar
  • 2 tbsp. olive oil
  • 1 tsp. minced garlic
  • Salt and pepper

How to make it:

  • Wash and trim green beans
  • Bring 3 to 4 cups of water to a boil
  • Add green beans and bring water back to boiling
  • Cook 5 to 7 minutes
  • Chill immediately (or if you are ready to eat now, place the green beans in a bowl of ice water for 2 minutes)
  • Add chopped tomatoes, onions, garlic, apple cider vinegar, and olive oil to cooked beans
  • Salt and pepper to taste
