This salad is super quick and easy to make. It is the perfect fresh, cool side to accompany any spring or summer meal. Enjoy!
- 12 oz fresh green beans (preferably organic)
- ½ cup chopped onion
- ½ cup chopped tomatoes
- ¼ cup apple cider vinegar
- 2 tbsp. olive oil
- 1 tsp. minced garlic
- Salt and pepper
How to make it:
- Wash and trim green beans
- Bring 3 to 4 cups of water to a boil
- Add green beans and bring water back to boiling
- Cook 5 to 7 minutes
- Chill immediately (or if you are ready to eat now, place the green beans in a bowl of ice water for 2 minutes)
- Add chopped tomatoes, onions, garlic, apple cider vinegar, and olive oil to cooked beans
- Salt and pepper to taste
